Better Than Cookie Dough Overnight-Oats
Not only do I love oats, I love making overnight oats. It’s a simple meal prep that fills my stomach, and allows me to have energy for great adventures throughout the day!

This recipe is vegan, and it can be gluten free with gluten free oats! Overnight-Oat recipes are so fun to make because there’s a million different ways to make your overnight-oats. A few recipes include: espresso powder, eggnog, chai spices, peppermint extract, blueberries, coconut shreddings…etc. The list and possibilities are endless. It’s good to be creative and fun with your food! Enjoy making this recipe!
I particularly love this recipe for running races. It’s perfect because it’s just the right amount of food I need to be fueled before a race and it’s such an easy recipe to make that it makes a super reliable meal.
How to Store Overnight-Oats
I like to store overnight-oats in either a mason jar or the jar in this photo… although I’m not sure if it’s a product you can find in the USA (if you do find it, let me know!). You can also store overnight oats in a simple bowl or cup (I do recommend wrapping saran wrap on top).
Better Than Cookie Dough Overnight-Oats

minutesIngredients
1/2 cup of Water*
2 tablespoons of Peanut Butter (or other nut/seed butter)
1 tablespoon of Maple Syrup
1/2 cup of Oats
1/4 cup of Chocolate Chips
Half of a Banana
Directions
- In a small bowl mix together the Oats, Peanut Butter, and Maple Syrup.
- Once mixed together, place your mix into an airtight container. Pour in the water until it’s almost covering the Oats.
- Top with Chocolate Chips and Banana.
- Place in the fridge. Enjoy a great breakfast for tomorrow!
Notes
- Instead of Water you could also use any type of milk. (Almond, Coconut, Soy…etc.)
