I actually had to make this recipe for a coach/teacher this week and show her a photo of my meal I made and give the ingredients in different groups, like: fats, proteins, and carbs. And I wanted to do a Fall Vibe Buddha Bowl (+ Dirty Chai Latte), and it came out so amazingly good. So, this recipe is EVERYTHING, literally, it has the carbs, fats, proteins, and FALL VIBEzzz. 😉

Fall Vibe Buddha Bowl

Ingredients
Half of an Avocado
- Quinoa
1/4 Cup of Quinoa
1 Cup of Water
Half of a Vegan Low Sodium Bouillon
2 Leaves of Basil
- Apple & Cinnamon
1 Apple
1 Teaspoon of Cinnamon
- Carrots
1/2 Tablespoon of Olive Oil
2 Carrots
A dash of Garlic Powder, Basil, Salt, and Pepper
- Spinach
5-10 Leaves of Spinach
Drizzle of Olive Oil
- Dressing
Olive Oil
1 Teaspoon of Lemon Juice
Dash of Salt
Directions
- In a small saucepan, combine the water and quinoa. Bring the mixture to a boil over medium-high heat, then decrease the heat a bit to maintain a gentle simmer. Cook until the quinoa has absorbed all of the water, about 10 to 20 minutes. Remove the pot from heat, and let the quinoa steam for 5-10 minutes.
- While your quinoa is cooking/steaming you can chop the carrots and spinach into bite size pieces. Then in a small pan, put your carrots in first, and mix with olive oil, and whatever spices you may enjoy: (garlic powder, basil, salt, pepper), Cook until your carrots are soft, then add your spinach.
- For the apples: Cut the apple lengthwise into small pieces. Then in a small bowl, mix the apples and cinnamon together with a spoon.
- Once all your different foods are done, place all the foods together in a good looking bowl! For the final touch you add half of an avocado on the side and two leaves of basil on top of the quinoa for flavor!
